Turkey Chili (Monday Meals)

A favorite at our house it is in the permanent rotation. It’s always tasty and only requires one pot – the below yields 4-6 servings. Hurray!

Ingredients
1 pound ground turkey (dark, lean)
1/2 onion, diced
1 clove garlic, minced
16oz can kidney beans
16oz can tomato sauce
2tbs chili powder
1tbs ground cumin
1tsp dried oregano
1/4 tsp each salt and pepper

Heat the pot and add the turkey. When the turkey has let off a little fat, add in the onions. Cook until the onions are translucent and the turkey doesn’t have any more pink – breaking it up as you go. Add in the minced garlic. When the mixture is cooked through add in the beans and tomato sauce and mix. Then add in the dried ingredients – shaking them over the chili evenly. Stir to blend it all together. Bring down to a simmer and cover for 15 minutes – stirring occasionally.

I like to top mine with cheddar cheese and sour cream. My husband usually adds some hot sauce. J&G eat it as is.
