Coconut/Peanut Chicken (Monday Meals)

The recipe book where I found the original version of this calls it Thai Peanut Chicken. But the first ingredient is salsa – which has nothing to do with Thailand. Or at least not that I know of. Anyway, this is super yummy and will have your house smelling like heaven. As is often the case with be, the below assumes you have a slow cooker. Sadly J can not eat this as soy sauce has wheat as its first ingredient, but G is a big fan. It takes 15 minutes to prepare, 4 hours to cook, serves 4 and comes to 435 calories per serving (just for the chicken – any sides you choose will change that number, naturally)


1 cup salsa
1/4 cup creamy peanut butter
3/4 cup coconut milk
2 tablespoons lime juice
1 tablespoon soy sauce
1 teaspoon sugar
2 cloves garlic, finely chopped
1 tablespoon ground ginger (you can use fresh ginger if you prefer)
2 pounds boneless, skinless chicken breasts cut in to 1 inch pieces

Combine salsa, peanut butter, coconut milk, like juice, soy sauce, garlic and ginger in the slow cooker. Stir to mix all together. Add in the chicken and stir to coat. Cover and cook on low for 8 hours or high for 4 – until chicken is very tender and sauce has thickened. We serve with quinoa and green beans but you can go with rice and maybe carrots or whatever you like.
