Sunday Roast (Monday Meals)

A Sunday Roast, tagged as a Monday Meal and posted on a Tuesday.  Don’t ask.  The recipe is super easy, though.  So the confusion should end here.  I went through the recipes I have been sharing and while they are quite easy, this leaves them all in the dust.  And it’s delicious. My Fitness Pal is telling me it’s only 400 calories per person – assuming 5 servings. Is that even possible? I’m eating this every night!

Ingredients:

3lbs beef chuck roast
16oz bag baby carrots
1tbs olive oil
1.5lb bag baby Dutch yellow potatoes, halved
1/4tsp each salt and pepper
1 medium yellow onion, chopped
1 10.5oz can beef consommé*

Place roast in a large slow cooker, drizzle with olive oil and turn to coat.  Add salt and pepper.  Place vegetables around roast.  Pour beef consommé over vegetables and roast.  Slowly add water until roast is just barely covered.  Cover and cook on low setting for 6-8 hours.  Remove roast and vegetables to a serving platter.  Slice roast to serve.  Yum.

*If you are keeping to a GF diet, check the ingredients on the consommé – it may have flour added as a thickening agent.
