Not-So-Sloppy-Joes (Monday Meals)

I have never reblogged anything but I’m giving it a shot. Not sure how this will work or look but here goes. This is the first recipe I ever posted and I’m making it again tonight. It occurs to me that when I wrote this I had a sum total of zero followers so to most of you, this is new! Hurray!

I cook for my family almost every night but the idea of typing out a meal a day is just too much for me. But once a week, I think I can handle that. Today we did a modified version of a Real Simple recipe

Hands on time: 20 minutes, total time: 30 minutes
Serves three adults – or two adults and two kids!

1 small yellow onion, finely chopped
1 clove garlic, finely chopped
1 red bell pepper, finely chopped
1 pound ground turkey
1 6-oz can of tomato paste
1 1/2 teaspoons of chili powder
1 teaspoon ground cumin
1/8 teaspoon black pepper
1/8 teaspoon cinnamon
1 teaspoon kosher salt
6 hamburger buns
1/2 cup (2 ounces) grated Cheddar
1/2 cup sour cream

The original recipe uses olive oil and ground beef. We moved away from beef a long time ago and use almost exclusively turkey for recipes…
