Lamb with Quinoa and Cherries

So easy, so good. According to My Fitness Pal the below will come to 660 calories per person – assuming 4 servings.


2 cups quinoa
2 tsp curry powder
2 cups cherries, halved and pitted
1 cup torn, fresh basil leaves
2 tsp olive oil
8 lamb chops, 2lbs total
1/2 tsp cumin
1/2 tsp salt and pepper

Cook the quinoa according to the package directions, adding curry powder to the water before cooking. I also add 1 tsp of olive oil as it adds flavor and keeps the quinoa from sticking to the pot.

Meanwhile, heat the remaining oil in a large skillet over medium-high heat. Season the lamb with salt, pepper and cumin. Cook the lamb 2-4 minutes for side for medium rare, adding more oil to the pan if necessary.

Serve the lamb over the quinoa and take deep breaths as it smells damned good. I wonder sometimes about serving sizes. I doubled the starch of the original recipe – I honestly wonder who would want so little starch to go with their meal. But to each his own. I think the 200 calories are worth it. And we prefer quinoa to rice.
