It’s been a while so I figured I would ease my way back into this whole blogging thing with one of the easiest recipes of all time – assuming you have a slow cooker, of course. The below serves four at 550 per person, according to My Fitness Pal.
12oz fresh green beans, trimmed and washed
14oz smoked kielbasa, cut into serving-sized pieces
8 red-skin new potatoes, quartered
1/2 onion, diced
1/4 tsp salt
1/4 tsp pepper
1/4 tsp oregano
1/8tsp red pepper flakes
2 tbs olive oil
2 cups water
Put everything in the slow cooker. Set on low for 8 hours. Divide, serve, eat.
This is actually the second time I tried this recipe. The first time I made it exactly as described in my recipe book. There was no water or any kind of liquid mentioned. I thought it was kind of strange. Usually you add liquid (beef or chicken bullion, for example) or use vegetables that let off a lot of liquid (tomatoes or zucchini) but this had neither. I should have listened to my instincts as I came home to a burnt mess. Never again!
