One Pan Chicken Alfredo (Monday Meals)

Are you hungry now? Do you hate washing dishes? Then this is the recipe for you! The below made five servings at 717 calories per person (as per My Fitness Pal).

1 tbs olive oil
1lb boneless, skinless chicken breasts
1 clove garlic, minced
1/2 medium white onion, diced
1 14oz can low-sodium chicken broth
1 cup heavy cream
1lb penne pasta (uncooked)
1 cup parmesan cheese
2 cups cherry tomatoes, halved
salt and pepper
1/4 tsp dried oregano
1/8 tsp cracked red pepper

Cut the chicken into one-inch pieces. Season with salt and pepper. Heat the oil in a saute pan with deep sides and brown the chicken. The chicken doesn’t have to be cooked through before moving on to the next step – it will continue cooking as the dish simmers. When the chicken is browned, add the onions and garlic. Sautee for about a minute. Pour in the chicken broth, heavy cream and uncooked pasta. Bring it all to a boil and then bring back down to a simmer. Cover the pasta/chicken. The original recipe said this part should take 15-20 minutes, but it cooked in 10 for me so keep an eye on things. When the pasta is almost cooked through, add in the tomatoes. When the pasta is tender, remove from heat and stir in the parmesan cheese, oregano and red pepper. Add more salt and pepper as needed.
